LIMITED MICRO BATCH: 100 BARS

 
In our factory we keep a private stock of cacao and chocolate just to please and train our own taste buds. However, every now and then we come across a small lot, something unusual, something special that we would like to share with our customers.

This bar is made from lot number 14 of our private collection. The Nicaragua Dark 71% is a blend made of four genotypes of Nicaragua cacao grown and fermented by Ingemann farmers:
• Ingemann Chuno cacao
• Ingemann Tuma cacao
• Ingemann Tenor cacao
• Ingemann Rugoso cacao

The result is a “not for beginners” chocolate bar. We have made only 100 two-bar boxes. That’s it.


TASTING NOTES

Strong dark notes hit your palate immediately, followed by flavours of liquorice, tobacco, green herbs and a grapefruit finish. Also, as you will notice in the aftertaste, there is still a considerable amount of tannin in the chocolate bar which activates the mouth.


AGED FOR 1 YEAR, MORE PATIENCE REQUIRED

Tannin supports the “ageing potential” of this bar. We have aged the chocolate mass for one year. As an interesting experiment you could eat one bar now and leave the other bar to further “age” for another 6 to 9 months. Our prediction: the tannin will make way for more mellow flavours of dark chocolate, herbs and fruit.

A variety of in-house developed techniques is used to craft the unique Heinde & Verre chocolate. The cacao beans of one single farmer are handselected and roasted in multiple ways to bring out as many flavours as possible.

Each Heinde & Verre box contains 2 bars, one bar for now, one for later. At Heinde & Verre we take chocolate and your enjoyment very serious. Quality chocolate needs to be protected so we have developed the perfect packaging to preserve all the natural flavours. An aluminium pouch protects against light, humidity, dust and dirt. A double air tight seal protects against odours. We have extracted part of the air to reduce oxidisation and moisture.
